Food Design Thinking
¿Qué significa diseñar alimentos en 2020? En esta charla de Francesca Zampollo se recorrerán los límites de la disciplina de Diseño de Alimentos, y se explorará las herramientas para diseñar más allá de la comida. Food Design Thinking se propondrá como el proceso para intentar diseñar significados y para el planeta tierra.

In short… Food Design is my life… =)
It all started during my BA, when during a semester designing washing machines and lamps and shoes, I was introduced to the magical world of Food Design, and I fell in love. Back then things were still very confused and confusing… There wasn’t a website, there wasn’t a journal, there wasn’t a definition. I ended up being the first person to do all of that.
In 2009 I founded the International Food Design Society (IFDS) which was the first society on Food Design.After founding the IFDS I organised the First International Symposium on Food Experience Design (London, November 2010), which was the first academic conference on Food Design, the International Conference on Designing Food and Designing for Food (London, June 2012), the Second International Conference on Food Design (NYC, November 2015), and the Third International Conference on Food Design (free online conference, 2017). In 2013 I founded the International Journal of Food Design published by Intellect, which is the first and only academic journal in Food Design, and of which I am the Founding Editor.
I have a PhD in Design Theory applied to Food Design. I have taught Food Design, Design Theory and Design Thinking at Auckland University of Technology (New Zealand) and at London Metropolitan University (UK). My most recent milestone was creating and founding the Online School of Food Design, a place for online learning on Food Design! The Online School of Food Design is a virtual school where to learn what Food Design is and how to do it! It is for chefs, designers, and for anyone interested in applying design to food and eating.
Often I’m invited to give – and deeply enjoy giving – talks on Food Design and Food Design Thinking; public speaking is one of my favorite things =) And I work as a consultant for companies who want a glimpse into the tools that can help them design more meaningful food.
I’m also working on a project called In Search of Meaningful Food. I started this project in July 2014 as my research project. I was interested in finding out why certain foods become meaningful to people, and others don’t. And finally, I invest a lot of time in my YouTube channel which I use to spread the word about Food Design, show all its facets, and try and create an understanding of this discipline as something that will take us to a better, more sustainable future.
